Home-made kaya (Coconut Jam)

My version of KAYA (Coconut jam)

ingredients:

400ml coconut milk

125g sugar

25g brown sugar

5 egg yolks

1 tbspn cornflour

2 pandan leaves (1 used 2 tspn of pandan essences)

1. In a sauce pan, boil 1/4 cup of water with white n brown sugar.

2. Add in coconut milk. Bring to boil and keep stirring.

3. Add beaten egg yolks. 

4. Add in the pandan essence or pandan leaves.

5. add in cornflour (diluted with a bit of water).

6. Continue stiring until thicken. Might take an hour. I cheated by increasing the heat :-)

7. Cool the kaya completely. Discard the leaves (if using). And its ready! Refrigerate the remaining.

Note: if the kaya becomes lumpy, u might wanna use blender, then cook again :-)

Spicy Lamb Stew

Ingredients

 

·         2 lbs lean lamb stew meat, cut in to 1 1/2 inch cubes

·         1 tablespoon olive oil

·         1 large onion, chopped

·         4 cloves garlic, grated

·         1 large leeks, cleaned & chopped

·         3 large carrots, cut into 1 inch pieces

·         2 cups celery, chopped

·         2 potatoes, cut in half

·         1/4 cup tomato puree

·         1 bay leaf

·         1 teaspoon dried thyme

·         salt and pepper

·         4 cups broth (vegetable, Chicken or beef)

·         1 cup grated cheddar cheese

 

 

Directions:

 

1.       Add oil into a large pot.  Brown onion, garlic & lamb cubes for approx 10 mins.

2.       Add leeks, carrots, celery, potatoes. Stir.

3.       Add the broth and stir to get the bits off the bottom of the pot.

4.       Season with salt, pepper, bay leaves & thyme.

5.       Cover and simmer until the meat & veggies are tender.

6.       Add cheese, and simmer for about 10 minutes.

7.       Ready to serve with bread or rice.

Im still a novice cook.. in the process or discovering the art & pleasure of baking and cooking.. Away from my home country, the only way to satisfy my craving for home delicacies is to make them myself (modify them with whatever ingredients available locally). I like to try and discover new recipes.. but it has got to be simple, delicious & hassle free..

This blog is actually a request from a friend (haze, that’s u!). I’ve been keeping my recipes (the one I’ve tried and tested) all over the places.  Its probably the time to have a blog to keep all the recipes in one place. Enjoy!
